Derek has revived English cooking over that period and has bought back many famous, and sometimes forgotten, English dishes. Eggs Drumkilbo, once a favourite of Queen Elizabeth The Queen Mother, has been revived for all our guests to enjoy. Judging from the amount being served they really do enjoy it. The Lobster Thermidor Omelette he has created is a firm favourite with many guests.

As well as running one of London’s busiest kitchens (producing food not only for the Dining Room but for hundreds of people a week in our lounge bar and of course many private functions) he also finds time to help in the community. On a regular basis Derek teaches children to cook at Great Ormond Street Hospital and brings fun and frivolity to otherwise difficult lives. Derek is also a very active member of the Academy of Culinary Arts as well as mentors young apprentices who train in our kitchens.
